Date Pie Beats Pumpkin'


Dessert time. I feel bad that I didn't post this earlier, but anyhow. This pie tastes AMAZING, simply because it is made of dates! Dates why! Hahah get it? Okay, anyways, enough of that. This is my own recipe, and I hope you enjoy it as much as I do. It will defiantly make up for not having pumpkin pie this thanksgiving, even though I could have made a raw vegan one, but for some reason I didn't. Next year! All you're going to need to make it is....

3 cups of soaked (for at least 1 hour in hot water) dates
1 medium apple
1 tbsp cinnamon
1 tbsp cinnamon (for crust)
1 cup walnuts
1/4 cup pecans
10 large dates
 
First, using a food processor, blend up the nuts until they are in little chunks. Add in the 10 large dates and pulse until it has mixed in with the nuts. Add in the 1 tbsp cinnamon as well. It should stick together when you squeeze it with your hands. Take the mixture and spread it onto a pie plate like a crust. If you are having difficulty because the mixture keeps sticking to your fingers, wet your fingers. Once you are finished with it, put it in the fridge to set.

Next, drain the soaked dates and put them in a blender with the tbsp of cinnamon. Once it has been all mixed up, chop up your apple into good sized chunks and add them into the blender, blending them with the dates. If you need to add a little water thats fine, but minimize the amount to keep your mixture thick. Pour the mixture into the pie crust and let it cool in the fridge for an hour before serving. Sprinkle a little cinnamon on top when you serve it if you wish!
